Water comes from the burns, the lochs or the wells. It runs into a bassin or to the pump house where it is only filtered. Many Scots claim that the best water must flow over peat and granite. Peat because it has many elements which are important for the taste and the aromas, granite because there can be very few mineral salts solved out of the stone. Soft and peaty water gives us a heavy malt, hard water gives a smooth and soft malt whisky. The water source is important for the distillery and determine itīs place because you need it for mashing and cooling.
